Are you craving something cheesy and satisfying around the campfire? Ditch the pre-packaged snacks and whip up a ridiculously easy campfire quesadilla! This recipe is quick and easy. It’s the perfect way to enjoy a hot and delicious meal outdoors. You’ll have a mouthwatering dinner in minutes with just a few simple ingredients and your trusty campfire.

Ingredients:
- 2 large flour tortillas (try the extra-large ones for bigger appetites!)
- 1 cup shredded cheddar cheese (or your favorite melty cheese – pepper jack, anyone?)
- 1/2 cup chopped onion
- 1/2 cup chopped green bell pepper
- 1/4 cup chopped jalapeño (optional, for those who like a kick!)
- 1 tablespoon olive oil
- Salt and pepper to taste
Equipment:
- Cast iron skillet (a campfire cooking essential!)
- Spatula (a long-handled one is ideal for campfire cooking)
Instructions:
- Prep work: Get those veggies ready! Chop the onion, green bell pepper, and jalapeño. This is a great task to get the kids involved with (under supervision, of course!).
- Fire up the skillet: Place your trusty cast iron over the campfire. Let it heat up for a few minutes until it’s nice and hot. Test the heat by sprinkling a few drops of water on the surface. The water should sizzle and evaporate quickly.
- Sizzle those veggies: Add the olive oil to the hot skillet. Toss in the chopped onion, green bell pepper, and jalapeño (if using). Cook until they soften and become fragrant, about 5 minutes. Stir occasionally to prevent sticking.
- Quesadilla time! Lay one tortilla in the skillet. Sprinkle half of that delicious cheese over it, then top with half of the sizzling veggie mixture. Now, more cheese! Sprinkle the remaining cheese on top, then finish with the second tortilla.
- Golden brown perfection: Cook your campfire quesadilla for 2-3 minutes per side. Wait until the tortillas turn a beautiful golden brown. Make sure the cheese is melted and gooey. Keep a close eye on them – campfires can have hot spots!
- Dig in! Carefully slide your masterpiece onto a plate (or a clean cutting board). Cut it into wedges and serve immediately. Enjoy the melty goodness!
Tips from seasoned campers:
- Get creative with fillings: Don’t be afraid to experiment! Add some cooked chicken, crumbled beef, or black beans for a heartier meal. Leftover chili? Throw that in there, too!
